Ingredients to Prepare soft puffy chocolate cakecake

Maida(flour)  - 2 cups
Powdered Sugar  - 1 cup 
Butter  - ½ cup 
Curd (Fresh)  - 1 cup 
Baking Powder  - 1 spoon 
Baking Soda  - 1 spoon 
Cocoa  - 4 spoons 
Chopped Nuts  - Cashew nuts, Walnuts, Badam (almonds) 

Preparation of the cake 

  • Mix maida, salt, baking powder, baking soda, cocoa powder, sieve the mixture and keep it aside.

  • Take another bowl and beat the curd and sugar for 5 minutes. Add butter and mix it well. Then add the chopped nuts on the top. To this batter add the sieved mixture slowly and mix it carefully for 5 minutes. 

  • Transfer the batter to greased baking pan and bake for 40-45 minutes at 350 degree.

 Ingredients to Prepare Icing to decorate the cake 

Icing Sugar or Powdered sugar - 500 gms 
Powdered gelatin  - Powdered gelatin – 4 spoons (Mix it with warm water to dissolve) 
Glucose  - Glucose – 5 spoons (Mix it with water to dissolve) 
Egg white  - Egg white – 1 · 

Blend the above ingredients in a mixing bowl and transfer it to an air tight container and store it for one day.  If you want your sugar paste to be yellow you can add pineapple essence, for rose add rose essence, for chocolate colour add melted chocolate.  For other colours you can use food colours sold in the shops.

Decorating the cake

Spread white colour sugar paste evenly over the cake. Put some red colour paste in the icing gun and decorate the border of your cake. For X-mas tree in the center use  green and chocolate colour icing. Few multi-coloured dots on the tree to show the tree is decorated. Dark colour for your script "Happy Christmas".
